Christmas is the Time for Leftovers, Like, Duh

There is a turkey burrito/enchilada casserole in my oven right now; the latest in a long line of menu items featuring turkey, seeing as we had that twenty-two pound turkey to share amongst a whopping six people, two of whom eat like, well, like birds.

Ahem.

So, easy recipe to follow:

-Dice a couple of cups of leftover turkey, mix with one can of diced green chilies and one can cream of chicken soup. Fill six flour tortillas with turkey mixture, sprinkle with shredded cheese, roll into a nice tight burrito shape and place in a large baking dish. Pour one large can of green chili sauce over burrito/enchiladas, sprinkle with additional shredded cheese and bake in a 350 degree oven for forty-five minutes or until heated through. Remove from oven, lie to your children about contents of burrito/enchiladas ("Is that turkey? AGAIN?!"), cross your fingers and hope for the best.
