Summer Potluck Series #1, Mexican on the Porch

Last night, we hosted the first in what is expected to be a summer-long series of potlucks to take place between our home, Mama Jill's, Bethany's, and whomever else decides to join in the fun. Our theme was Mexican, with a feast that included chicken enchiladas, Spanish rice, shrimp tacos, Mexican street corn dip (recipe coming soon because that shit was da bomb!), and enough chips, salsa rojo, and salsa verde to feed a small army.

Our army consisted of fourteen and a half people (Baby Cooper doesn't eat much, ha, ha!), and we included an on-going cornhole tournament in the fun.

















Of course, it isn't a party without cocktails, so, I mixed up a big pitcher of Jana's mojitos and a few pitchers of margaritas as well as offering a couple of Mexican beers (including Corona, because irony).


It was a great evening and we are all looking forward to next week, when we gather at Mama Jill's for  #2 of our series; a Mediterranean-themed feast. I am already scouring Pinterest for recipes so that my contribution to the dinner is both authentic and delicious. This is going to be so much fun and I am really looking forward to seeing how far we can take it.
